This is one of our family Christmas traditions. Homemade French Toast casserole.
I’m not one to post pix of food on social media but for this, I had to make an exception. Snapping the pic and posting Facebook earlier Christmas Day, I didn’t quite expect the reaction it brought…such as this comment from Tracey:
“You can’t post a picture of something that looks so good without the recipe!!!!!”
Ok…here it is, right out of my wife’s cookbook!
JANET MITCHELL’S AMAZING CHRISTMAS MORNING TRADITION FRENCH TOAST CASSEROLE
1 loaf Mancini’s bread, cut into 1″ cubes…but any French/Italian bread will work
1 dozen eggs, lightly beaten
2 packages cream cheese, cubed
2 cups milk (we keep 1% in the house)
1/2 cup whipping cream
1/2 cup sugar
1/2 teaspoon nutmeg
1 tsp cinnamon
1 teaspoon vanilla extract
1/2 tsp salt
1/4 cup maple syrup
Using a greased 13″x 9″ baking dish, layer bread and cream cheese like lasagna.
Mix the lightly beaten eggs with the milk, whipping cream, sugar, nutmeg, cinnamon, vanilla, salt and maple syrup.
Pour mixture over the bread/cream cheese cubes, making sure all bread is under the liquid.
Cover and chill in refrigerator overnight (8 hours minimum).
Remove from refrigerator 30 minutes prior to baking.
Preheat oven to 350 degrees, bake uncovered for 50 minutes.
Let stand for five minutes.
PREPARE TO BE AMAZED…and don’t ask about the calories.
